MUSHROOM
BURGER WITH GROUND TURKEY by CHEF DAN:
Makes
4-6 burgers
INGEDIENTS:
1
pound lean ground turkey
8
crimini mushrooms
1/2-
red onion, plus 1 tablespoon, chopped
2
garlic cloves
1
tablespoon soy sauce
1
teaspoon EACH sumac, and gram marsala
Sea
salt and freshly ground black pepper to taste
1-1/2-tablespoon
sesame oil
4-6
slices of cheese
Whole
wheat sandwich thin, 1 tomato sliced, 1 onion sliced, roasted garlic hummus,
mayo, lettuce and other fixings
DIRECTIONS:
1.
Take
6 crimini mushrooms and slice 1/4-to1/2- inch slices, set aside.
2.
Take
remaining mushrooms and chop very finely, place in separate bowl, set aside.
3.
In
a bowl combine turkey, garlic, red onion, chopped mushrooms, garlic, soy sauce,
sumac, gram masala, and S&P, and thoroughly combine with your hands.
4.
Divide
the meat into 4-6 equal portions.
5.
Using
your hand carefully shape each one into a 1/2-“-3/4”
patty.
6.
In
a skillet heat the 1 tablespoon oil over high-heat when sizzling.
7.
Add
the patties and cook 3 minutes on each side, cook until golden brown.
8.
Top
with cheese, allowing cheese to melt by covering skillet.
9.
Set
aside.
10.
In
a sauté pan, heat 1/2-tablespoon of oil over medium-heat.
11.
Add
I tablespoon onion, sliced mushrooms and sauté for 1 minute, season with salt
and pepper.
12.
Assemble
sandwich thin, tomatoes, sliced onion, hummus and mayo, and some lettuce.
