RED
CURRY BURGERS WITH GRILLED PINEAPPLE by CHEF DAN:
Serves
4
INGREDIENTS:
1
tablespoon lime juice
1/4-cup
mayonnaise
1
tablespoon red curry paste
1
tablespoon olive oil
1
onion, minced
1/2-fresh
pineapple, cored and sliced into 1-inch thick slices
1
pound ground lean beef
2
garlic cloves, minced
1/4-cup
fresh goat cheese
DIRECTIONS:
1.
In
a bowl stir together lime juice and mayonnise: set aside.
2.
In
a skillet add oil over medium when sizzling.
3.
Add
red curry paste and sauté until fragrant about 30 seconds.
4.
Add
onion, garlic and sauté for 4 minutes.
5.
Combine
curry mixture and ground beef until well incorporated.
6.
Divide
into 4 equal portions:

Form
each portion into a ball and, using both thumbs, make a depression in the center.
8.
Fill
depression with 2-3 teaspoons of goat cheese.
9.
Mold
beef around goat cheese, pressing patty flat.
10.
Pre-heat
grill to medium-high.
11.
Just
before grilling brush gill grates with oil to prevent sticking.
12.
Spray
pineapple slices with cooking spray.
13.
Grill
pineapple for 4 -5 minutes or until dark gill marks appear, turning once; transfer
to a plate.
14.
Cook
burgers 6-8 minutes or until internal temperature is 165 F turning once.
TO ASSEMBLE;
Assemble burgers using hamburger buns,
beef patties, pineapple and lime mayonnaise.
