FAVORITE AUSTRALIAN BEER BARBECUED WINGS

INGREDIENTS:
12
chicken wings, remove tip from the wings
3
tablespoon olive oil
3
tablespoon lemon juice
3
tablespoons Worcestershire sauce
1/4-Foster’s
beer
2
tablespoons cumin
1
teaspoon EACH sea salt and freshly ground black pepper
2
tablespoons olive oil
1
onion, finely chopped
2
garlic cloves, minced
1
thumb-size fresh ginger, grated
1/2-teaspoon
red pepper flakes
1
cup ketchup
1/2-cup
Foster beer
2
tablespoon EACH lemon juice, rice wine vinegar, and Worcestershire sauce
1
tablespoon EACH brown sugar, and honey
2
teaspoon EACH soy sauce, Dijon mustard, and fish sauce
DIRECTIONS:
1.
Make
2-3 deep slashes, to the bone to the meaty part of each wing.
2.
Add
chicken wing and next 7 ingredients to a zip-lock bag.
3.
Seal
and refrigerate up to 4 hours, turning occasionally.
BARBECUE
SAUCE:
1.
Heat
oil in a skillet over medium-heat when sizzling.
2.
Add
onion, garlic, ginger, and pepper flakes, sauté for 5 minutes.
3.
Stir
in remaining ingredients and bring to a boil.
4.
Reduce
heat and simmer for 15 minutes, stirring occasionally.
5.
Reserve
1 cup sauce for serving.
6.
Oil
the grates; drain the wings and arrange then on the hot grate.
7.
Pulling
wings open to expose as much skin as possible.
8.
Grill
turning several times with tongs, until no longer pink 12- 15 minutes.
9.
The
last 5 minutes, brush with sauce, then transfer to a platter and brush with
sauce again.
10.
Serve
with reserved sauce.
