CABBAGE CARROT JICAMA AND
APPLE SLAW by CHEF DAN:
Serves

INGREDIENTS:
1
small head red cabbage, shredded
1
carrot, peeled and shredded
1
small jicama, peeled and shredded
1
apple, cored and thinly sliced
1
red bell pepper, cored and very thinly sliced
1/2-red
onion, halved and very thinly sliced longwise
2
tablespoon rice wine vinegar
1/4-cup
sour cream
1/4-cup
raisins
2
tablespoon honey
1/2-
tablespoon chives or 2 scallions, cut on the bias
1/2-
tablespoon dried oregano
1/2-teaspoon
kosher salt
1/4-teaspoon
white pepper
2
teaspoon whole anise (optional)
DIRECTIONS:
1.
In
a dry skillet over low heat roast the anise until they smell good.
2.
Remove
from heat and grind into a powder in a coffee grinder.
3.
In
a bowl combine cabbage, carrots, jicama, apple, bell pepper, onion, and raisins.
4.
In
another bowl combine honey, and rice wine vinegar, whisk until smooth.
5.
Add
the sour cream, chives, oregano, anise powder, salt and pepper.
6.
Whisk
all the ingredients together.
7.
Stir
into cabbage mixture and chill before serving.
