CHOCOLATE RASPBERRY TRUFFLES FOR VALENTINE DAY ENJOY DAN:

       CHOCOLATE RASPBERRY TRUFFLES FOR MY VALENTINE by CHEF DAN:
Serves 2

INGREDIENTS:
8 fresh raspberries
1/2-cup semi-sweet chocolate chips
1/4-cup whipping cream
1/2-cup cream cheese
2 tablespoons powder sugar
1 tablespoon raspberry liqueur
3/4-teaspoon unsweetened cocoa powder for dusting

DIRECTIONS:
1.    In a sauce pan add cream and bring just to a boil.
2.   Remove from heat and add chips, stirring until smooth.
3.   Stir in cream cheese, liqueur, powdered sugar, and a splash of sea salt.
4.   Transfer to a bowl, cover and chill for 4 hours, or until firm.
5.   Form mixture by heaping teaspoons into balls and rolling in the cocoa powder.
6.   Add fresh raspberries on the top.
7.   Chill on a baking sheet lined with wax paper, for 1 hour.
