LET" HAVE A POTLUCK AND INVITE SEVERAL PEOPLE ENJOY DAN:

BEAN SALAD WITH SUN-DRIED TOMATOES, By RIA KNIBBE:
Serves a bunch for a POTLUCK

INGREDIENTS:

1 (8oz) jar oil packed sun-dried tomatoes
1 (15oz) can white kidney beans, rinsed and drained
1 (15oz) Can black beans, rinsed and drained
1 (150z) garbanzo beans, rinsed and drained
1 (15OZ) can of black-eyed peas
1 red onion thinly sliced
1/3cup red wine vinegar
1/4- cup (DAN”S) honey
1/2-teaspoon dry mustard
1/2-cup fresh parsley, chopped
1/2- cup fresh basil
1/2- teaspoon each salt and freshly ground black pepper

DIRECTIONS:

1.     Drain sun-dried tomatoes in a sieve over a bowl, reserving oil.
2.     Place 1/4-cup reserved oil in another bowl.
3.     Return remaining oil and sun-dried tomatoes for use another day.
4.     Chop drained tomatoes a large bowl
5.     Add parsley, and all the beans, and onion to chopped tomatoes and stir gently to combine.
6.     Add vinegar, (DAN’S) honey, dry mustard, and salt and pepper to the reserved 1/4- cup olive oil, stirring with a whisk.
7.     Drizzle over bean mixture to gently coat.
8.     Cover and chill.
