KALE SALAD ENJOY DAN:

                                KALE SALAD by CHEF DAN:
Serves 4

INGREDIENTS:
2 bunches kale, rinsed, dried, ribs and stems removed
1/3-cup craisins (cranberries from Costco)
1-Granny Smith apple, chopped into bite-size pieces
1/2-cup raw cashews, toasted
1/4-cup goat cheese

DRESSING:
2-tablespoon apple cider vinegar
1-teaspoon Dijon mustard
1 garlic clove, crushed and chopped
1-teaspoon dried oregano
3-tablespoons olive oil
Salt and pepper to taste

DIRECTION:
1.   In a salad bowl combine kale and remaining ingredients.
2.   In a bowl whisk together all dressing ingredients.
3.   Toss salad with dressing or serve on the side.
