CHICKEN SOUP WITH SRIRACHA SAUCE FOR THE SOUP KITCHEN ENJOY DAN:

          CHICKEN SOUP WITH SRIRACHA SAUCE FOR THE SOUP KITCHEN
                                                                                                 By CHEF DAN:
Serves 30-40

INGREDIENTS:
4 tablespoon olive oil
4 pounds, boneless, skinless chicken breast, diced
4 teaspoon Sriracha sauce
4 onions, chopped
4 garlic cloves, minced
4 potatoes, diced
4 cups mixed frozen vegetables
1-teaspoon EACH cumin, dried thyme, dried oregano and dried basil
1 (48 Oz) can diced tomatoes
6 cups orzo
Salt and pepper to taste

DIRECTIONS:
1.   In a stock pot add oil over medium-high heat when sizzling.
2.   Add onions, salt, garlic, Sriracha sauce cumin, and thyme, oregano, and basil, sauté for 4-5 minutes.
3.   Add chicken and sauté for 3-4 minutes or until chicken just starts to cook.
4.   Add broth, potatoes, mixed vegetables and tomatoes, stir well and bring to a boil.
5.   Reduce heat cover and simmer for 30 minutes.
6.   Bring back to a boil; add orzo and boil for 10 minutes.
7.   Season with salt and pepper.
