SAUSAGE SOUP WOW!!!!!!!!!! ENJOY DAN:

TOSCANA SOUP FOR THE SOUP KITCHEN by CHEF DAN:
Serves 30- 40

INGREDIENTS:

22 cups chicken broth
2 tablespoons olive oil
12 potatoes, halved and sliced
3 pounds pork sausage links
4 onions, diced
4 garlic cloves, minced
1 tablespoon red pepper
1/2-cup crumbled bacon
12 cups kale
1 quart half and half

DIRECTIONS: (PRE-HEAT OVEN TO 300 DEGREES)

1. Place sausage links on a baking sheet and bake 25 minutes.
2. Slice into 1/2-inch slices.
3. Heat oil in a stock-pot over medium-heat.
4. Sauté onions for about 5 minutes.
5. Add garlic and red pepper and sauté 1 minute.
6. Stir in broth, potatoes and simmer for 20 minutes.
7. Reduce heat to low and add sausage, kale and half and half.
8. Simmer for about 15 minutes or until heated through.
9. Top with crumbled bacon.
