AVOCADO
GAZPACHO by CHEF DAN:

INGREDIENTS:
2
cups Knudsen very Veggie juice
1
cup vegetable broth
2
tomatoes diced
2
avocados, peeled, pitted, and cut into bit-size pieces
2
cucumbers diced
1
(14.5 Oz) can diced tomatoes
1
bell pepper chopped
2
tablespoons olive oil
2
scallions thinly sliced
1
tablespoon EACH sherry vinegar and fresh cilantro
1/4--
EACH teaspoon cumin, and celery powder
freshly
ground black pepper to taste
DIRECTIONS:
1.
With
an immersion blender blend until chucky.
2.
refrigerate
up to 4 hours or overnight.
