YORK STRIP STEAK WITH CUMIN AND BRIE BUTTER by CHEF DAN:
Serves

INGREDIENTS:
3
tablespoon brie cheese
3
tablespoon butter
1
tablespoon fresh snapped chives
Pinch
chipotle chili powder
1/4-teaspoon
Seasoned Pepper Medley, divided
Sea
salt to taste divided
1
tablespoon EACH ground cumin, and curry powder
2-6
ounce New York strip steaks
2
tablespoons grape-seed oil
INGREDIENTS:
(PREHEAT THE OVEN TO 425 F)
1.
In
a bowl, combine the brie, and next 5 ingredients.
2.
With
a fork whisk until smooth.
3.
In
another bowl combine cumin, pepper, and salt.
4.
Rub
the steaks evenly with the cumin mixture.
5.
Pressing
the rub on firmly.
6.
In
a cast iron skillet add grape-seed oil over medium-high heat.
7.
When
sizzling; add the steaks, flipping once, until browned on both sides, about 2
minutes per side.
8.
Transfer
to the pre-heated oven and bake for 2 more minutes.
9.
Tent
the steaks with aluminum foil and let rest for 5 minutes.
10.
Serve
the steaks topped with some of the brie butter.
