FRESH OYSTERS WITH GIN AND CUCUMBER ENJOY DAN:

FRESH OYSTER WITH GIN DILL AND CUCUMBER by CHEF DAN:
Serves 4-6

INGREDIENTS:
24 ousters, shucked and in the half shell
Rock sea salt for serving
1 tablespoon finely chopped dill
1 tablespoon fresh snipped chives

GIN AND DILL VINAIGRETTE:
1 tablespoon dill
3- Tablespoons olive oil
2 tablespoon rice wine vinegar
1 tablespoon gin
1 tablespoon freshly ground black pepper
1/2-teaspoon brown sugar
1 tablespoon finely grated, peeled seeded cucumber

DIRECTIONS:
1.   To make the vinaigrette, place all ingredients into a Mason jar.
2.   Shake the ingredients together and allow to infuse for 10-20 minutes,
3.   Shake again before using.
4.   Put rock salt onto a plate, arrange the oyster on top.
5.   Place each oyster with a spoon of the vinaigrette.
6.   Garnish with lemon, dill, and chives.
