STEAK WITH HORSERADISH SAUCE by CHEF DAN:
Serves 2
INGREDIENTS:
2 steaks, fat trimmed off
2 tablespoons grapeseed oil
SAUCE:
1/2- cup light Greek yogurt
2 tablespoons fresh grated horseradish or REESE prepared horseradish
1 tablespoon white balsamic vinegar
1 tablespoon fresh tarragon, chopped
1 tablespoon fresh chives cut into 2-inch pieces
1/2- teaspoon salt
1/4- teaspoon fresh ground black pepper
DIRECTIONS:
1. In a cast iron skillet over medium-high heat add oil until bubbling.
2. Add steaks and cook for about 3 minutes or less each side.
3. Meanwhile in a blender mix sauce except chives and whip until smooth.
4. Serve with sauce and chives.
