SWEET POTATO LATKES ENJOY DAN:


                   POTATO SWEET POTATO LATKES by CHEF DAN:
Serves 4

INGREDIENTS:
3-sweet potatoes
1-onion,
2-eggs
1/2-teaspoon EACH salt & pepper
1/8-teaspoon chili powder
3-tablespoons corn starch
1/4-cup vegetable oil
1/2-cup sour cream

DIRECTIONS: (PREHEAT OVEN TO 200 F)
1. Fit a food processor with shredding disk.
2. Shred sweet potatoes & onion.
3. Place in a colander & let drain 10 minutes.
4. Transfer to a large bowl.
5. Whisk in eggs, & next 4-ingredients.
6.Stir into potato mixture.
7. Sift in potato starch into mixture & combine well.
8.In a skillet add oil over medium-high heat & when sizzling.
9.Add 1/4-cup mounds of sweet potato mixture & flatten with spatula.
10.Saute until browned, 2-3 minutes per side.
11.Place on a baking sheet in pre-heated oven to keep warm.
12.Repeat with remaining sweet potato mixture.
13.Serve with warm sour cream.
