PACK’S SALMON WITH TOMATOES FOR THE SOUP
KITCHEN by CHEF DAN:

INGREDIENTS:
1
bottle of sake
10
cup Uncle Ben’s rice
30
cups fish stock
6
fresh caught salmon
2
tablespoon EACH dill weed and paprika
2
6 pound can of diced tomatoes
2
tablespoon garlic, minced
1/2-cup
lemon juice
3
lemons, sliced
1/3-cup
parsley
1
tablespoon black pepper and chives
DIRECTIONS:
1.
In
a stock-pot add vegetable broth, sake and bring to a boil.
2.
Add
salmon and cook for 20 minutes.
3.
Remove
salmon and let cool, then cut into bit-size pieces.
4.
Bring
salmon broth to a boil, add rice, dill weed, paprika, tomatoes, garlic lemon
juice and salt and pepper to taste.
5.
Add
salmon, cover reduce heat and simmer for 1 hour.
6.
Add
parsley, chives and lemon slices.
