CELERY
APPLE SALAD FOR THE SOUP KITCHEN by CHEF DAN:
Serves

INGREDIENTS:
7
cups sliced celery
4
apples, thinly sliced
3
cups dried sweet cherries
3
cup frozen peas, thawed
3/4-cup
mayonnaise
1/4-cup
lemon juice, plus 1 tablespoon
1/2-cup,
plus 2 tablespoons chopped pecans, toasted
Sea
salt and freshly ground black pepper to taste
INGREDIENTS:
1.
In
a bowl combine celery, apples, sweet cherries, peas, and pecans.
2.
Stir
in mayonnaise, and lemon juice.
3.
Season
with salt and pepper to taste.
4.
Chill
before serving.
