SABRINA'S
APRICOT JAM AND ORANGE ROASTED CORNISH GAME HENS

INGREDIENTS:
1
onion, finely chopped
2
garlic cloves, minced
1/2-cup
chicken broth
1
teaspoon finely, shredded orange rind
1/2-orange
juice
1/2-cup
Sabrina’s apricot jam
2
tablespoons honey
4
teaspoon cornstarch
2-2
pound Cornish game hens, (cutting directions below)
1
orange, cut into 6 wedges
Orange
slices
DIRECTIONS: (PRE-HEAT OVEN TO 375 DEGREES)
1.
Spray
a skillet with non-stick cooking spray.
2.
Through
in the onions and garlic and cook 4 minutes.
3.
In
bowl stir together, chicken broth, orange peel, orange juice, apricot jam,
honey and cornstarch.
4.
Add
to the skillet with onion and garlic, and cook until thick and bubbly.
5.
Cook
and stir for 2 minutes.
6.
Remove
from the heat.
7.
In
a roasting pan place each hen half atop one orange wedge.
8.
Baste
with some of the sauce.
9.
Roast
in pre-heated oven for 1 hour.
10.
Baste
hens after cooking for 30 minutes.
11.
Transfer
to serving platter.
12.
Reheat
reaming sauce and serve with the hens.
13.
Garnish
with orange slices
