ROASTED
SWEET POTATOES AND VEGETABLES WITH THYME by CHEF DAN:
Serves

INGREDIENTS:
6
sweet potatoes cut into long thin rectangles
2
carrots cut into long thin rectangles
2
parsnips cut into long thin rectangles
2
tablespoons olive oil
1/2-teaspoons
EACH garlic powder, and curry powder
1/4-teaspoon
EACH ground cumin, chili powder, ground ginger, cayenne, and ground white
pepper
1/8-teaspoon
sea salt
3
tablespoons pure maple syrup
DIRECTIONS: (PRE-HEAT OVEN TO 350 DEGREES)
1.
Scatter
pieces of sweet potatoes, carrots, and parsnips prepared baking sheet.
2.
Drizzle
with oil and all spices, season with salt and pepper.
3.
Bake
for 30 minutes or until vegetable are partially soft.
4.
Scatter
thyme over vegetables and drizzle with maple syrup.
5.
Bake
an additional 15 minutes.
