ROASTED
GARLIC MASHED POTATOES FOR THANKSGIVING by CHEF DAN:
Serves
8
INGREDIENTS:
3-1/2-Pounds
bliss potatoes (skin on)
4
tablespoons butter
1/2-cup
sour cream
1
cup grated mozzarella cheese
1
head of garlic
1
tablespoon olive oil
2
teaspoon dried rosemary
Season
salt and freshly ground black pepper to taste
DIRECTIONS: (PRE-HEAT OVEN TO 350 DEGREES)
1.
Cut
the top off garlic and remove papery skin.
2.
Place
on aluminum foil and drizzle with olive oil.
3.
Double
warp and place on baking sheet, bake for 1 hour.
4.
While
garlic is roasting, boil potatoes in a large pot of water with a pinch of salt,
cook until fork-tender.
5.
Drain
chop, cool and stir in butter, sour cream, cheese and rosemary.
6.
Remove
garlic from oven, cut in half, and squeeze the softened cloves into the
potatoes.
7.
Season
with salt and pepper.
8.
With
a potato masher mash until desired consistency.
