FAT ALFREDO SAUCE WITH PASTA AND CAULIFLOWER by CHEF DAN:
Serves

INGREDIENTS:
8
Ounces fettuccini noodles, spaghetti or angel hair pasta
1
head cauliflower cut into florets
SAUCE:
2
cups skim milk
1
cup Parmesan cheese
1/4-cup
fat free cream cheese
1/2-teaspoon
basil
1/2-teaspoon
garlic powder
1/2-teaspoon
sea salt
2
tablespoon cornstarch
1/4-teaspoon
white pepper
1
teaspoon red pepper flakes
DIRECTIONS:
1.
Steam
the cauliflower.
2.
Cook
noodles or pasta according to package direction.
3.
In
a sauce-pan over medium-heat slowly add milk, stirring constantly.
4.
Mix
cornstarch with 3 tablespoon milk and add to hot mixture.
5.
Add
cream cheese and Parmesan and season with salt and pepper.
6.
Add
cooked cauliflower, red pepper and noodles or pasta and mix to evenly
distribute the sauce.
7.
Top
with fresh Parmesan and serve.
