HEALTHY BAKED FRIES by CHEF DAN
Serves 2-4
INGREDIENTS:
3 russet potatoes cut lengthwise into 1/4-inch stripes
1 tablespoon grape-seed oil
1 tablespoon herbs de Provence
1 tablespoon garlic powder
Sea salt and black pepper to taste
Cooking spray
DIRECTIONS: (PRE-HEAT OVEN TO 400 DEGREES)
1. In a large bowl cover sliced potatoes with water.
2. Refrigerate 3- 4 hours or all-night.
3. Lightly coat a baking sheet with cooking spray.
4. Drain potatoes and pat dry.
5. Dry bowl and add potatoes.
6. Toss the potatoes with oil, herb de Provence, garlic powder and salt and pepper.
7. Arrange in a single layer on the baking sheet.
8. Bake until golden brown and crisp.
9. Cook about 45 minutes.
10. Turn potatoes over and cook 15 minutes more.
