BEET ZOODLES WITH SPICY PEANUT SAUCE by
CHEF DAN:

INGREDIENTS:
2
tablespoons olive oil
1or
2 golden beets
1/2-teaspoon
kosher salt
SPICY
PEANUT SAUCE:
1/3-cup-almond
butter
2
EACH tablespoon soy sauce, rice wine vinegar, and lime juice
1/2-teaspoon
EACH chili flakes, and jalapeno powder
2
garlic cloves, smashed
2-1/2-tablespoons
warm water
2
teaspoon sesame oil
Dry
roasted peanuts and scallions bias cut for topping
DIRECTIONS:
1.
Peel
beets and immediately use spiralizer with blade c to make into zoodles.
2.
Squeeze
one lime in a bowl of warm water and add beet zoodles.
3.
Let
stand 5 minutes.
MAKE
SPICE PEANUT SAUCE:
1.
Add
all spicy peanut sauce ingredients in a bowl.
2.
Whisk
to combine.
3.
Take
zoodles out of the bowl and pat dry.
4.
In
a skillet heat olive oil over medium-high heat and when sizzling.
5.
Add
zoodle, tossing to coat, and sauté for 6-8 minutes.
6.
Top
each bowl a good amount of sauce, peanuts, and scallion.
