ROASTED TOMATILLO CHILE VERDE by CHEF
DAN:
Serves

INGREDIENTS:
14
tomatillo, husked and rinsed
10
garlic cloves
2
green pepper
2
jalapeño, stemmed, seeded,
1-2
tablespoon grape-seed oil
1
onion, cut into thick slices
1/2-cup
chicken stock
1
tablespoon dried oregano
1
tablespoon EACH lime juice and lemon juice
DIRECTIONS; (PRE-HEAT OVEN TO 400 DEGREES)
1.
Place
the tomatillos, garlic cloves, and red and green peppers on a prepared baking
sheet.
2.
Drizzle
with grape-seed oil and season with sea salt and pepper.
3.
Roast
the vegetables until browned and softened about 20 minutes.
4.
Remove
the oven and let cool.
5.
When
cool peel, seed the peppers and place in the food processor.
6.
Add
garlic onion, oregano, lime and lemon juice.
7.
Pulse
until the mixture is fully incorporated but not pureed.
8.
Season
with salt and pepper.
