FORDS NEW YORK CILANTRO LIME GRILLED CHICKEN by CHEF DAN:
Serves

INGREDIENTS:
6
boneless, skinless, chicken breasts halves (about 6 Oz) each pounded with a mallet
to about 1/2-inch thick, (cut them in 2)
MARINATE:
1/4-cup
fresh lime juice
1/4-cup
extra-virgin olive oil
4
garlic cloves, minced
2-3
tablespoon fresh cilantro, chopped
1-1/2-teaspoon
firmly packed brown sugar
1-1/2-teaspoon
kosher salt
1
teaspoon ground cumin
1
teaspoon freshly ground black pepper.
DIRECTIONS:
1.
Whisk
marinates ingredients until thoroughly blended.
2.
Place
chicken and marinate in zip-loc bag, squeezing out the air.
3.
Marinate
for a t least I hour but no long then 3 hours in the refrigerator.
4.
Remove
from the refrigerate 30 minutes before grilling.
5.
Remove
chicken from marinate and drain off excess.
6.
Grill,
uncovered for about 3 minutes per side or until juices run clear.
7.
Can
also grill fresh lime pieces for serving with the chicken.
8.
Top
with salsa, sour cream, and springs of cilantro.
