SHREDDED BEETS WITH VINEGAR ENJOY DAN:


SHREDDED BEETS WITH WHITE BALSAMIC VINEGAR by CHEF DAN:

Serves 4

 

INGREDIENTS:
2 Tablespoon olive oil

2 fresh beets, peeled

2 tablespoon white vinegar

1/2-cup dried cherries

1/4-cup feta cheese

1/4-cup dry roasted peanuts

Kosher salt to taste

 

DIRECTIONS:

1.   Coarsely shred the beets in a food processor with grater attachment.

2.   Place in a b owl and set aside.

3.   In skillet over medium-heat add vinegar and cherries.

4.   Season with kosher salt to your taste.

5.   Cook, covered for 2 minutes.

6.   Let cool.

7.   Stir in the vinegar and cherries into the bowl of beets.

8.   Top with feta cheese and peanuts.

SHREDDED BEETS WITH CREAMY DRESSING ENJOY DAN:

SHREDDED BEETS WITH CREAMY DRESSING by CHEF DAN:
Serves 4-6

DRESSING:
1/2-cup plain fat free yogurt
1/4-cup lime juice
2 tablespoon cilantro leaves
1 tablespoon light agave nectar
1 tablespoon rice wine vinegar
2 cloves garlic, chopped
3 tablespoons grape-seed oil
Kosher salt and black pepper to taste

INGREDIENTS:

1.   2 large fresh beets, peeled
2.   2 large tart apples, corded, peeled
3.   1/4-dressing
4.   2 tablespoons goat cheese
5.   2 tablespoons chopped chives

DIRECTIONS:
1.   Coarsely shred beets and apples in a food processor fitted with grater attachment.
2.   Place in a bowl and set aside.
3.   Combine the dressing in a food processor and puree until smooth.
4.   While the machine is running, slowly drizzle in the oil until incorporated.
5.   Season with salt and pepper.
6.   Toss the beets and apples with the dressing.
7.   Top with goat cheese and chives

SOUP KITCHEN MEAT AND BEANS ENJOY DAN:

BEEF RAGU WITH GARBANZO BEANS AND WHITE BEAN SOUP by CHEF DAN:       
Serves 30-40

INGREDIENTS:
5 cups dry garbanzo beans
5 cups dry white beans
4 pork hocks
22 cups beef stock
30 potatoes
10 pounds beef steak
2 tablespoon olive oil
1 (49 Oz) can diced tomatoes
6 carrots, coarsely chopped   
6 celery stalks, coarsely chopped
3 onion, coarsely chopped
12 garlic cloves, minced
8 cups, orzo pasta
1/4-cup Italian seasoning
2 teaspoons salt
1/2-teaspoon pepper

DIRECTIONS:     (PRE-HEAT OVEN TO 350 DEGREES)
1.   Soak the beans and hocks in stock-pot covered with water.
2.   Next day drain.
3.   Add the stock; and bring to a boil and then simmer for 3 hours.
4.   Remove hocks and reserve meat.
5.   Place meat on a baking tray.
6.   Rub meat with Season All, and bake in pre-heated oven for 1 hour.
7.   Let cool and slice thinly.
8.   Heat oil in a stock pot over medium-heat and when bubbling.
9.   Add carrots, celery and onions, sauté for 5-7 minutes.
10.                Add  sliced meat, garlic,  Italian seasoning, salt and pepper
11.                Add potatoes, tomatoes, bring to a boil and then simmer for 1 hour.
12.                Add orzo and simmer for 30 minutes longer.

WOW!!!!!!!!!!!POKI WHAT COULD BE BETTER ENJOY DAN:

                            HAWAIIAN AHI POKI by CHEF DAN:
Serves 4

INGREDIENTS:
1 pound fresh sashimi-grade tuna
3 tablespoon light soy sauce
3 scallions finely cut on the bias
1/2-red onion, finely minced
1 tablespoon sesame oil
1 tablespoon, finely grated ginger
2 tablespoon EACH rice wine vinegar, mirin, lemon juice, tamarind
1 tablespoon toasted sesame seeds
Chili garlic sauce to taste
Thinly sliced (hayanie Kombu) dried kelp
1 tablespoon chopped cashews

DIRECTIONS:
1.   Blend all ingredients EXCEPT the tuna in a bowl.
2.   Mix well.
3.   Taste and season, adding kosher salt as necessary.
4.   Use as much of the sesame oil and chili sauce as you like.
5.   Cut tuna into 1/2-inch squares.
6.   Gently toss the tuna in the dressing and refrigerate for 30 minutes.

MORE BEEF IN THE CROCK-POT ENJOY DAN:

ROAST BEEF, SWEET POTATOES, CELERY BULB, AND CARAMELIZED GINGER IN THE CROCK POT:                                                        by CHEF DAN:
Serves 6

INGREDIENTS:
1 (3 pound) beef roast
3 tablespoon flour
1/4-teaspoon EACH sea salt and freshly ground black pepper
1 tablespoon olive oil
1 onion, cut into thin rings
1 celery bulb, peeled and diced
3 sweet potatoes, peeled and cut into cubes
6 whole peeled garlic cloves
4 carrots cut into 1-inch rounds
1 (14.5 Oz) can stewed tomatoes
1 red bell pepper, cut into chunks
2 cups beef broth
1 cup red wine
1 package Mrs. Grass onion soup mix
1/2-cup caramelized ginger
1/2-teaspoon dried sage
1/4-teaspoon cardamom
1 cinnamon stick
6 dried mangos, cut in-half

DIRECTIONS:
1.   Toss beef roast with the flour and 1/4-teaspoon each of salt and pepper.
2.   Heat oil in a skillet over medium-high heat.
3.   Brown meat for about 5 minutes, browning meat on all sides.
4.   Place cubed sweet potatoes, carrots, and onions in the crock-pot.
5.   Place meat on top of sweet potatoes mixture.
6.   Add beef broth and red wine.
7.   Add whole garlic, peas, sage, cardamom, cinnamon stick and mangos.

ELK IN THE CROCK-POT ENJOY DAN:

CROCK POT ELK ROAST WITH SWEET POTATOES by CHEF DAN:
Serves 6

INGREDIENTS:

3 tablespoon flour
1/4-teaspoon EACH sea salt and freshly ground black pepper
1 tablespoon olive oil
1 onion, cut into thin rings

2 cups beef broth
1 cup red wine
1/2-teaspoon dried sage
1/4-teaspoon cardamom
