TEQUILA MASHED SWEET POTATOES

INGREDIENTS:
4
large sweet potatoes
4
tablespoon tequila
3
tablespoons butter
2
tablespoon lime juice
2
tablespoon pure maple syrup
1-1/2-teaspoon
vanilla extract
1/2-teaspoon
EACH cinnamon, and nutmeg
1/2-teaspoon
freshly ground black pepper
1/4-cup
chopped walnuts
DIRECTIONS:
(PREHEAT OVEN TO 400 F)
1.
Rinse
the potatoes and bake for 45-60 minutes.
2.
The
skin should be loose and potatoes tender.
3.
Peel
and place them in a bowi.
4.
Slightly
mash them, then pour in the tequila, and next 7 ingredients.
5.
Mash
until smooth.
6.
Sprinkle
walnuts on top.
