FROZEN CHOCKLATE BANANAS ENJOY DAN:


FROZEN CHOCOLATE BANANAS FOR THE LADIES AT THE SOUP KITCHEN                                                                    by CHEF DAN:
Serves 12

INGREDIENTS:
12 ripe bananas
12 wooden popsicle sticks
4 cups semi-sweet or bittersweet chocolate chips, melted
4 tablespoons butter
1/2-cup shredded coconut

DIRECTIONS:
1.  In a sheet pan with wax paper.
2.  Cut 1-inch off the end of each banana.
3.  Insert a popsicle stick into cut end f banana, about 1/2-way.
4.  Place the bananas on the sheet pan and freeze for 1 hour.
5.  Melt the chocolate and butter in a bowl over a sauce pan of simmering water, stirring occasionally.
6.  Cover each banana with melted chocolate using a rubber spatula and sprinkle with coconut.
7.  Freeze for two hours.
