VEGETARIAN GUMBO IN THE CROCK
POT by CHEF DAN:
Serves
4-6 (GUMBO a West African word means
‘okra)
INGREDIENTS:
2
cups vegetable broth
1
onion, chopped
2
green bell peppers, chopped
6
garlic cloves, minced
3
bay leaves
1
(10 Oz) package okra, chopped
1
(14.5 Oz) can diced tomatoes
2
cups fresh or frozen corn
2-cups
vegetables broth
1
(15 Oz) can black beans, drained and rinsed
2
teaspoons EACH dried thyme, dried basil, mustard powder, and Cajun seasoning
1-1/2-teaspoons
EACH cayenne pepper, sea salt and black pepper
1
teaspoon each cumin, smoked paprika
1/4-teapoon
liquid smoke
1/2-cup
all-purpose flour
DIRECTIONS:
1.
Spray
the interior of the crock pot with Pam.
2.
Combine
vegetable broth, onion, bell peppers and garlic.
3.
Cover
and cook on Low for 4 hours.
4.
Add
okra and remaining ingredients.
5.
Cover
and cook on Low for 3 hours more.
